Forest of Elderberry trees

Near Punta d'Adda (CR) you can admire a lush forest of Elderberry trees, especially in May the flowers of the elder are used in herbal medicine for their diaphoretic action. With these flowers it is possible to make a syrup, obtaining a potion that is widely used throughout the historical coultures of many countries: Austrian Tyrol and Trentino Alto Adige, in Carnia and in the Nordic countries and Eastern Europe also. From the flowers is obtained an extract that is used for the production of Sambuca, a liqueur. Moreover, by exploiting the fermentation of Saccharomyces mushrooms naturally present on its flowers, you can make the elderberry sparkling wine called by the folks sparkling wine of the poor. The flowers are delicious especially fried. With the fruits of the elderberry you can make a jam, but be carefull. Do not overdo the quantities because it may have laxative effects.
